Quay to undergo major three-month renovation
Quay will close temporarily from March 19 to make way for a restructured dining room, a new state-of-the-art kitchen and brand new menu.
Executive chef Peter Gilmore said the temporary closure will give him the opportunity to “fulfil even greater aspirations for my food”.
“This new chapter will facilitate a long held desire to take the diner on an even more personal dining experience,” he said. “My aim is to create a more interactive journey representing my own culinary evolution.”
Following the renovation, Quay will introduce a tasting menu only experience for the first time, saying goodbye to some of Gilmore’s most famous dishes.
“This is a time of change and I want to be looking forward,” he said.
The Fink Group is working with TZG architects on the renovation, which will see the restaurant repositioned to open up dining on the Harbour Bridge side and will feature a series of small dining spaces around the restaurant.
